The Sea Winds (Etesians)
During the hot Mediterranean summer, the refreshing Etesian winds blow from the sea and cool our groves every day. This natural temperature control is vital. It protects the olive fruit from stress and preserves its delicate, volatile aromas until the harvest.
Wild Herbs & Soil
Our trees grow in soil enriched by wild, aromatic herbs like thyme and rosemary.
