Ingredients
- Firm tomatoes
- Bell peppers
- Round zucchinis
- Round eggplants
- Arborio rice
- Grated onion
- Fresh mint
- Fresh parsley
- Sea salt
- Black pepper
- Fresh tomato purée
- Extra virgin olive oil
Preparation
Hollow out the vegetables and reserve their pulp.
Mix the pulp with the rice, grated onion, chopped fresh herbs, sea salt, black pepper and a generous amount of extra virgin olive oil.
Fill the vegetables about three-quarters full and arrange them closely in a baking tray.
Pour over the fresh tomato purée mixed with additional olive oil and bake slowly until the vegetables are tender, lightly caramelised on top and the rice is fully cooked.
Allow the tomato juices and olive oil to reduce naturally into a rich sauce at the bottom of the tray.
